Calabrese brothers to open the Holy Birds in London

The restaurateurs behind Wringer & Mangle, the Hoxton Pony and Hoxton Gin in London are to open a new bar and restaurant in E1 called the Holy Birds.

Brothers Gerry & Jon Calabrese of Calabrese Holdings group have been inspired by the 1960s London music and art scene for their new venture.

Opening in November, the Holy Birds will have an extensive cocktail offer created in collaboration with the Calabrese Brothers' father, bartender Salvatore Calabrese.

The site, on Petticoat Lane Market will be set over two floors with restaurant, bar, lounge and private dining rooms and is designed by DTWO Design, with all interiors fitted by Dimension Interiors.

Upstairs The Holy Birds restaurant will specialise in poultry, offering a menu of locally-sourced, free-range birds including everything from chicken, duck and grouse to wood pigeon, quail and pheasant.

A state-of-the-art sound system for DJs and occasional live performers will provide a soundtrack inspired by the era.

Gerry Calabrese said: "Our ambition is to create a restaurant and cocktail destination that celebrates the incredible cultural decade of the 1960s, whilst bringing it to the forefront of 21st century dining with our own modern day twist. We have meticulously designed a space that people will love not only for the food, that showcases poultry at its best, but the incredible cocktail and drinks menu that we have crafted with our father, the soundtrack that celebrates the 1960s, and a setting that harks back to a more free-spirited time. We're thrilled to be opening The Holy Birds doors this November."

Jon Calabrese added: "Although Gerry and I have worked together on a multitude of projects, this will be only the second time we will be collaborating on a launch, for what will be London's only poultry specialists. Set on the famous Petticoat Lane, a place that has strong family ties for us both, we are hugely excited by what's to come over the next few months. We've brought together our expertise in mixology, hospitality and events to create something very special."
