CLAW to take up residency at the Sun & 13 Cantons

The Sun & 13 Cantons in Soho, London has announced street food vendors, CLAW will take up its next residency.

CLAW, which operates at street-food market Kerb, on London's Southbank, will take over the kitchen from 22 October until January next year for lunch from Tuesday to Saturday and for dinner on Tuesday, Wednesday and Saturday.

During the residency, CLAW will serve a menu featuring: signature dish ‘Claws'(cracked crab claws in a smoked pancetta broth); new dishes such as sourdough fried oysters with oyster cream; KFC, Kimchi fried soft-shell crab; and IPA mac ‘n' cheese with brown crab.

Vegetarian options include: BBQ tenderstem; black garlic yoghurt and pickled walnuts; and kelp egg yolk and cashew.

Founder of CLAW, Fabian Clark, said: "We're really honoured to have been chosen to follow on from Sambal Shiok and Darjeeling Express at the Sun & 13 Cantons. It's an amazing opportunity for us to run a bricks-and-mortar restaurant and will allow us to offer guests a much wider choice of dishes than before, showing what we mean by ‘sociable, sustainable seafood'."

CLAW source sustainable and taceable crab from Start Bay in Devon, a project started as a response to learning that 80% of British crab was being exported.
