Polish-born chef Damian Wawrzyniak launches crowd-funding restaurant campaign

Polish-born chef-consultant Damian Wawrzyniak has launched a crowdfunding campaign to raise funds for his first restaurant.

Wawrzyniak, owner of the Fine Art of Dining, is internationally renowned for his babka, a brioche-like yeast cake traditionally baked for Easter Sunday in Poland.

He is hoping to open his first restaurant close to his home in Cambridgeshire or Hertfordshire, near to local farmers and a nearby micro-brewery. The restaurant will have "honest prices and fantastic, traditional flavours", he said.

The chef appeared on the BBC's Mary Berry's Easter Feast earlier this year, when Berry visited his home and spent time with his family to learn how to make the famous babka.

His aim is to raise £180,000 for the project with a variety of rewards available in return for investment: a £200 donation will get you dinner for two at one of the restaurant's soft openings, £800 will buy dinner at home cooked by Wawrzyniak for yourself and five friends, and £65 will buy you your own individual babka cake and a signed copy of the babka recipe used in the programme with Berry.

"After over 18 years in the food industry, I have finally decided to turn pans in my own kitchen!" said Wawrzyniak. "Over the past few months my heart has been shouting about food and I've got to get it off my chest. I am ready to serve you food which represents my soul."

Early on in his career, he completed a stage at Noma in Copenhagen and he also managed the Champagne & Seafood Restaurant at the London 2012 Olympics. He recently oversaw a new project at Park Royal, London, including a culinary academy owned by the Maroush Group.
