Rajesh Suri launches Grand Trunk Road
Suri, formerly of Michelin-starred Tamarind, Mayfair; Imli Street, Soho; and former-Michelin-starred Zaika, Kensington, London, has teamed up with Head Chef Dayashankar Sharma to offer a combination of classic, regional dishes using ancient and traditional methods.
Sharma began his career in India and has worked at hotels such as the Taj Samudra in Sri Lanka. He was personal chef to the Indian Prime Minister before moving to London and working with Suri at Tamarind of Mayfair.
From there, Sharma moved to Imli Street restaurant, and was taken on to reopen Zaika in 2014 as head chef.
Dishes made using seasonal, local ingredients include: crusted seared scallops with roasted red pepper, garlic and tomato chutney; pheasant supreme with pickling spices and yoghurt; ground lamb with mint, ginger and seven spice mix; Cornish lobster with black, green and red pepper corn; mixed mushrooms with fenugreek and petit pois.
Suri said: "I want to remind people of the intricate, fragrant roots of Indian food; Grand Trunk Road provides quality fare with original heart - a fabulous pairing rich with depth and flavour."
