Ollie Dabbous is to open a third restaurant having partnered with the Experimental Group on the Henrietta hotel in London's Covent Garden.

The 80-cover restaurant will be spread over two floors of the hotel and will feature a seasonal menu taking inspiration from France.

Hospitality collective the Experimental Group was founded it Paris by friends Romée de Goriainoff, Pierre-Charles Cros and Olivier Bon, and joined by Xavier Padovani in 2010. Together they operate a mix of 17 bars, restaurants and hotels in New York, Paris, London and Ibiza, including Experimental Beach, Beef Club & Ballroom and Le Grand Pigalle, and will open the 18-bedroom Henrietta hotel early next year.

The hotel will be a collaboration between The Experimental Group, who are behind Experimental Cocktail Club and London Seven Dials wine bar Compagnie des Vins Surnaturels, and Ollie Dabbous.

It will be Dabbous' third site after the Michelin-starred Dabbous, which opened in 2012, and Barnyard on London's Charlotte Street.

The Experimental Group's Xavier Padovani said: "We are thrilled to be partnering with Ollie on the restaurant for our first London hotel. He is leading the way in London gastronomy, and we have come to know him well, so this is a perfect fit for us."
