Simon Rogan to bring L'Enclume to Rogan & Co
Chef Simon Rogan will be devoting himself to Rogan & Co, his "relaxed neighbourhood restaurant" in Cartmel, as part of a special week of promotions for customers.
Rogan, who was named AA Chef of the Year in September, will be cooking at the Devonshire Square eaterie exclusively on 9-15 January 2017, while L'Enclume closes for improvements.
During the week, Rogan will be taking diners on a trip down memory lane as he serves dishes previously served at his two-Michelin-starred L'Enclume, which are no longer on the menu. Lunch will be charged at £50 for five courses and dinner at £90 for 10 courses.
The triple Catey-award-winning chef says the dining experience will take guests on a culinary journey of his progression as a chef.
Dishes are likely to include "cubes from land and sea"; "chick ‘o' hake in verjus"; "hot and sour soup", a dish that experiments with temperatures; and "expearamenthol frappe", a dessert comprising espresso powder, served with a eucalyptus foam on a pear jelly.
Rogan told The Caterer: "I cooked at Rogan & Co for a period last year when L'Enclume was closed and it was fun to do so we thought we would do it again.
"This time, though, we're serving a tasting menu of retro L'Enclume dishes that we used to serve some time ago."
