Claude Bosi appoints Andrew Barber as head chef of the Swan
Andrew Barber has been appointed head chef at the Swan Inn, in Claygate, Surrey, owned by chef Claude Bosi and his brother Cedric.
Barber has formerly held positions at Marco Pierre White's Steakhouse Bar & Grill as group executive chef and at the Admirable Crichton Events as executive group head chef.
The Swan Inn serves dishes such as: crab on toast; beer battered fish and chips with peas and tartar sauce; Herefordshire beef fillet with gratin dauphinoise, tomatoes Provencal and shallot sauce; treacle tart with clotted cream; and rhubarb jelly and custard.
Barber will be guided by Claude Bosi in his new role.
The Bosi brothers bought the 55-cover Swan Inn in April last year, with the aim of creating a family-friendly, relaxed environment and serving traditional pub food.
Calude Bosi is set to launch a new fine-dining restaurant on the site of Bibendum with Sir Terence Conran later this year, following the recent sale of his two-Michelin-starred restaurant Hibiscus in Mayfair, London.
