Former Square chef appointed head chef at Fenchurch, Sky Garden
Daniel Fletcher, formerly head chef at the Square, has been appointed head chef of the Fenchurch restaurant at London's Sky Garden.
Fenchurch is the venue's refined dining restaurant operated by events company Rhubarb.
Fletcher worked under Phil Howard for more than two years as a senior sous chef, during which time the Square held two Michelin stars, and was appointed head chef following the departure of Gary Foulkes.
Overseeing a team of 17, including the newly appointed senior sous chef Liam Fauchard-Newman from the Ledbury and sous chef James Southern, also from the Square, Fletcher will develop and execute a new menu.
Fletcher also spent time at the Kitchin in Edinburgh and the Black Swan restaurant in Yorkshire, and has held several roles in restaurants in Australia, South Africa and New Zealand.
Fletcher said: "I am extremely excited to join the Rhubarb team and embark on this new journey on the 37th floor of this iconic building. My cooking style is fresh, clean flavours with beautiful presentation - and I very much hope guests will enjoy it."
Katie Harel, marketing director at Rhubarb, added: "We are absolutely delighted to have Daniel on board at Fenchurch. His impressive Michelin-starred experience offers a new level of dining for guests."
