What was your first job in catering? Chef apprentice
What do you normally have for breakfast? Usually just coffee and a cigarette
What do you do to relax? Play my PlayStation
What's your favourite restaurant?
Menega Cafe in Jimbaran, Bali
What's your favourite drink? Beer
What's your favourite cuisine?
Polish cuisine
Are there any foods that you refuse to cook with? I refuse to cook with foie gras; no animal should suffer just to make humans happy
What flavour combinations do you detest? Olives and white chocolate
If not yourself, who would you rather have been? No one! I'm happy with who I am.
What's your favourite hotel? I prefer to stay at home
Cast away on a desert island, what luxury would you take?
It would have to be beer
What do you always carry with you? A smile
What daily newspaper/ website do you read? I stay up to date with the BBC and the Metro, London Evening Standard, The Times and The Daily Mail
If you had not gone into catering, where do you think you would be now?
The theatre, I think
When and where was your last holiday?
My honeymoon last year. We went to Dubai and the Maldives
What irritates you most about the industry?
I can't give you a short answer on this one; I'd probably have to write a book to tell you

Maciej Darowski, Adam Szczygło, Tomas, Dan, Mateusz, Jarek and Kay Kay. They all work with me at Cha Chaan Teng. I was lucky in that I could choose my team and my friends chose to join me on this journey.
