Chefs Rene Redzepi and Thorsten Schmidt are to launch a new restaurant within the former Noma restaurant building in Copenhagen on 5 July.

The 60-cover Barr will "not be another Nordic restaurant", said Schmidt, who previously ran restaurant Malling & Schmidt in Risskov, Denmark, with designer Rikke Malling.

Instead, it will draw inspiration from the eating and drinking traditions of the North Sea including Scandinavia, Benelux and the British Isles.

Schmidt said: "The cooking of this region has always fascinated me - from classic dishes like the humble frikadeller (Danish meatballs) and schnitzel, to the use of marmite in cooking in Britain. At Barr, we will serve familiar foods in the best way we can, building on the last decade's gastronomic development in Copenhagen.

"We want to carry on the spirit of experimentation and knowledge, serving our versions of traditional dishes, along with a great selection of beers and aquavit from this extraordinary area."

The two-Michelin-star Noma shut its doors on 24 February 2017. The team have since been operating a pop-up restaurant in Mexico. It is set to open again in a new site in Copenhagen this year.
