Wasabi to open Asian-inspired bakery Soboro

Soboro, a new Asian-inspired bakery concept developed by sushi chain Wasabi, will launch its first site in the Lion Yard shopping centre in Cambridge on 14 July.

The latest high street addition to the Wasabi family will sell a wide selection of Japanese and Korean pastries and sandwiches plus some British favourites.

The 75-cover outlet takes its name from a classic Korean sweet bun. Open from breakfast through to early evening, Soboro's food will be made fresh every day by a team of trained patissiers and bakers. The menu will include Korean and Japanese-inspired rolled matcha croissants and chicken katsu sandwiches, as well as a range of more familiar products such as a ham and cheese baguettes.

As well as using Spirit coffee machines, Soboro has also created its own arabica blend of coffee.

Wasabi was founded in 2003 by chairman Dong Hyun Kim, a former fresh food market trader, and now has 55 branches across the UK and three in the US.

Business development manager Darren Church said: "The QSR sector is very crowded at the moment but we believe that British customers love to try anything different so long as it's tasty and exciting and that's exactly what we have with Soboro. Soboro is going to be a place where people are going to want to meet friends, relax with a coffee or just grab something wonderful to take away. It's not like anything else on the high street right now."
