Tom Griffiths to bring Flank to London

Chef Tom Griffiths has announced he will be opening his first brick and mortar site in East London.

Griffiths launched Flank, a Brighton pop-up, in 2015. The concept utilised nose-to-tail cooking and took pride in sourcing high-quality ingredients.

Flank is now set to open a permanent restaurant on 9 October. More details are yet to be announced.

Earlier this year, Griffiths was set to head the kitchen at Pascere in Brighton – a restaurant owned by Platinum Business magazine food and drink editor Amanda Menahem.

However three months later, he departed the restaurant ahead of its opening. A spokesperson said Griffiths and Pascere’s owners decided that “the partnership isn’t quite the right fit for this venture.”
