Australian chef Brett Redman to open restaurant at Principal London

Neptune is being created in the style of a neighbourhood restaurant by Redman and American-born fashion stylist-turned restaurateur Margaret Crow.

Redman runs Elliot's, a café-restaurant in London's Borough Market, which has been awarded a Bib Gourmand from Michelin for its simple menu. Together with Crow, he also owns Richmond, a restaurant-bar in Hackney, which has a focus on oysters.

Around £70m is currently being spent on transforming what was previously the 373-bedroom Hotel Russell on Russell Square, Bloomsbury, which dates back to 1898, into the Principal London. Interior designs for the bedrooms and public spaces are being created by Tara Bernerd & Partners, while Russell Sage has conceived the restaurants and the Gorgeous Group has designed the bar.

Alongside Neptune, the hotel will feature Fitz's, which is being described as "a sumptuously hedonistic cocktail bar", the Burr & Co coffee house by day and wine bar by night, the Palm Court for afternoon tea and a listed ballroom.

General manager Paul Walters, who was previously in the same role at the
InterContinental hotel in Sydney, is heading up the management team of the hotel.

Owned by Starwood Capital Group, Principal hotels are all located in iconic, landmark building across the UK. The London hotel will become the fifth in the brand, joining properties in Manchester, York and Edinburgh (two).

Further hotels in Birmingham, Cardiff, Glasgow, Leeds, and Liverpool are set to join the brand over the next two years.
