Tom Brown to launch Cornerstone in Hackney next year

Chef Tom Brown is to open his first solo restaurant Cornerstone in Hackney Wick next March.

Brown, who until recently was head chef at chef-restaurateur Nathan Outlaw's Michelin-starred restaurant in the Capital hotel in London and also competed on BBC Two's 2017 Great British Menu, will open his own 46-cover restaurant in east London offering a daily changing menu shaped around seasonal produce.

It will include: pickled Porthilly oysters, celery and horseradish; chicken liver croquettes with devilled mayonnaise; smoked haddock, leek, rarebit tart and pickled walnuts; octopus cooked in cider with an apple and lentil dressing; and chocolate mousse with peanuts, lime and stout.

The kitchen will be a centrepiece to the restaurant and will include a counter-bar with eight seats.

Brown said: "Cornerstone is the next chapter in my career, I'm extremely excited for the future and having my own restaurant in an area I love."

Cornish chef Brown has worked for Outlaw for the past six years. He started at Outlaws at the St Enodoc Hotel in Rock, Cornwall and worked up to the position of head chef before being appointed head chef of the Capital hotel in Knightsbridge, London in 2016 where he won a Michelin star.

This year he won one of The Caterer's coveted Acorn Awards.
