What was your first job?
Anything that was required of me on the family grape farm while I was growing up

What do you do to relax?
Tennis, fly fishing – ideally meeting with friends to play tennis

What irritates you most about the industry?
Difficulty finding staff, there seems be so few out there

Which is your favourite restaurant?
In London, the Typing Room, but I’ve got many favourites worldwide

What flavour combinations do you detest?
I have not yet tasted or had any flavour combinations I detest… let’s hope it stays that way!

What’s your favourite book?
Warren Buffett’s Berkshire Hathaway Letters to Shareholders

If not yourself, who would you rather have been?
Ralph Lauren

Which person gave you the greatest inspiration?
My mother. She taught me the value of respecting people and life in general

Who would play “you” in a film about your life?
I’ll pass on this question, there’s not enough bald ones in the industry!

What is your favourite cuisine?
It varies, but I still appreciate French cooking the most

What is your favourite prepared product?
Sriracha sauce

Which person in catering have you most admired?
Too many greats to name, but Pierre Gagnaire and Jacques Maximin have always been my favourite chefs

What is your favourite drink?
Brewers & Union Dark Lager and good wine

What’s your favourite film?
Dirty Harry – I love Clint Eastwood

Who would be in your “fantasy” brigade?
Zac Whittle (Fenchurch), Dan Fancett (20 North Street), Grant MacPherson (ScotchMyst), Julien Thevenot (Rhubarb), Pierre Daret (Le Burgundy), Fin, Chris, Fernando and Jon (Rail House)
