Dirty vegan ‘butchery' restaurant opens in London

Vegan diners will be able to butcher their own ‘meat-free' steaks at a new restaurant set to open in London today.

Clean Cut in London's Dalston will feature alternative proteins moulded to look like animal carcasses, from which diners are able to select, and even butcher, their cut.

Guests will be invited to a butchery room at the back of the 60-cover site where they will have the opportunity to select their steak, which will be typically made from a variety of 28-day aged vegetable proteins, before hacking it from the replica animal.

The meat-free steaks will even bleed like real flesh, thanks to a specially developed beetroot-based ‘blood'.

Clean Cut founder Bev Ette said: "I wanted to harness the power of vegetable proteins to create something that meant everyone was able to experience the saliva-inducing excitement of cutting into meat products.

"Our bespoke ageing chambers mean that carcasses can age in carefully controlled conditions, before guest choose their prime cuts in our butchery room and indulge in some Salt Bae drama.

"And as our carcasses are made solely from vegetable protein we have been able to reduce the insurance premiums associated with guests handling meat cleavers by using knives made from sustainably sourced pine. This is not only safer but lends an extra dimension to the taste of the product."

The restaurant will open on 1 April 2018.
