LaLiT London hotel appoints former Cinnamon Kitchen head chef Santosh Shah

The 70-bedroom LaLiT London hotel has appointed former Cinnamon Kitchen head chef Santosh Shah as its new executive chef.

The LaLiT, set within the Grade II-listed former St Olave's Grammar School near Tower Bridge, opened last year after a five-year restoration.

Shah will be responsible for all food at the venue, including pan-Indian dining destination Baluchi, the Gallery, the Headmaster's and Teacher's Room bars, the Terrace, private event catering and room service.

Previously head chef of London's Cinnamon Kitchen and Anise, Shah worked beneath executive chef and chief executive Vivek Singh for more than two years.

Since relocating from Gujarat, India, to London in 2011, he has also held positions at Michelin-starred Benares restaurant and Dishoom.

Overseeing a team of 20, Shah has devised new dishes including: mace and cardamom-marinated lobster with seafood kichadi; monk beard, brown crab meat foam and homemade lime pickle; and tandoori celeriac with mint chutney, masala seeds, oxalis sorrel, tandoori smoked apple and garam masala purée.

Shah said: "I am excited to be joining the LaLiT London and embarking on this new journey with such an iconic hospitality group. I am looking forward to bringing my own inspiration and dishes to this new and exciting Indian dining destination."

Chef Shah will work closely with general manager Johnson Joseph and food and beverage manager Alexandr Strecha.
