I always start the day making pancakes for the family

I love TV. The comedian Russell Peters makes me laugh and I enjoy watching an inexperienced chef on Hell's Kitchen

Caramel, of course! I also love live music and I make sure I visit the Hard Rock Café in any new city I visit

The Kurumba resort in the Maldives
What is your favourite drink?
I love to try different teas. But if I'm having the evening off, a mojito or a single malt Aberfeldy
What is your favourite cuisine?
Contemporary American. I love to reinvent ‘comfort food' classics with an upscale gourmet twist

Ready to use bouillon cubes

Cast away on a desert island, what luxury would you take?
I would only need the sound of nature. But if I could pick the island, it would be Marinduque in the Philippines

Could I be a pet? They seem to have the stress-free life we all wish we had

A singer or a stage actor
Describe your ultimate nightmare?
I've dreamt about horror films that I've watched before bed and woken up my wife by screaming in my sleep. Waking up my wife from a deep sleep is my ultimate nightmare

I'm a huge karaoke fan
What irritates you most about the industry?
Elaborate presentation with no delivery. I'm a real advocate for keeping plating simple

I re-watch Gladiator on a regular basis
