Chef Tom Simmons' first solo restaurant at One Tower Bridge in London has fallen into administration.

A notice posted to The Gazette announced that Michael Durkan of Durkan Cahill has been appointed administrator to the restaurant, which serves British-French cuisine with a Welsh twist.

The administrators have confirmed that Tom Simmons Tower Bridge is continuing to trade and Berkeley Homes, the owner of One Tower Bridge has said it is confident the restaurant see success following a restructure.

Harry Lewis, managing director, Berkeley Homes South East London, said: "Following a business restructure, Tom Simmons will continue to trade at One Tower Bridge. We are confident that the quality of his food will guarantee continued success along with the other restaurants in the development. We are committed to supporting our new and established brands at One Tower Bridge, as it develops into an exciting new destination."

Simmons started off his career in local pubs but, looking for a challenge, he came to London to work as a chef de partie at Gordon Ramsay at Claridge's for a year, during which he was the youngest competitor to reach the quarter-finals of BBC Two's MasterChef: The Professionals in 2011.

He then did a season at L'Atelier in Morzine, France, before moving back to Pembrokeshire to spend three years as head chef of Wolfscastle Country hotel near Haverfordwest, where he won two AA rosettes.

He opened Tom Simmons at Tower Bridge in summer 2017.
