Former Michelin-starred chef to open Hertfordshire restaurant

Chef Kieren Steinborn-Busse is opening his first solo venture, the Falcon, in Hertfordshire in November.

The Falcon in Buntingford will serve British comfort food and rustic recipes using seasonal, local produce. The front-of-house team will be led by Steinborn-Busse's wife Natasha.

A carefully restored Grade II-listed building featuring original wooden beams and exposed brickwork will be the main 28-cover dining room. Two private dining rooms will seat 8-10 people each.

Steinborn-Busse was previously executive chef of Vinoteca and has also held roles as executive head chef at the Swan at Shakespeare's Globe in London and held a Michelin star for four years as head chef at Thackeray's restaurant in Tunbridge Wells, Kent.

He said: "We want to provide a great local dining destination, offering a space for people to interact, dine, drink and relax."
