Sushi handroll company launches £350,000 crowdfunding campaign

The Australian founder of a sushi handroll business is seeking to raise £350,000 to expand the business via a crowdfunding campaign.

Jeremy Bliss, a Melbourne lawyer, intends to grow his Inigo concept from one site in Throgmorton Street in the City of London to three kiosks across the capital in high footfall locations and in one food hall by the end of the year. Further sites in other UK cities will be explored over the next two years.

The £350,000 that is being sought amounts to a 13.45% stake in the business, which is being valued at £2.25m.

In Australia, sushi handrolls are sold in school and work canteens, corner shops and airports as a healthy grab-and go -snack.

Inigo's menu items include classic salmon, avocado and spicy tuna with a ponzu marinade, baby gem lettuce, pickled daikon spicy mayo; Peking duck or teriyaki beef with pickled shiitake mushroom; and miso broccoli roll with cucumber, pickled daikon and punchy black sesame miso.

Bliss said: "We are proud of our growth in this short time since we set up shop. We have a growing and loyal clientele at Bank so we are excited to expand the branch of the business. The extra opportunity to scale up with our corporate partners make this an excellent moment to bring in new investors and give us the opportunity to corner the market."

Bliss and co-founder of Inigo, Charlie Hall, are supported in the venture by business partner Theo Bennett, a former PR and restaurateur, and chef Terry Edwards.
