Emily Roux and Diego Ferrari's ‘Caractère' to open tomorrow

Caractère, the first restaurant by Emily Roux and Diego Ferrari, is opening tomorrow, with Roux overseeing front of house and Ferrari as head chef.

"I'm thrilled to be working front of house; great service is just as important as great food to me, and I love to talk and get feedback directly from our guests," said Roux, the daughter of chef Michel Roux Jr and the third generation of the Roux dynasty to turn restaurateur.

The menu will be divided into six character traits with up to three dishes to choose from in each section:

• ‘Curious' (small plates/starters) eg, seared mackerel, confit beetroot, black cardamom and parsley condiment
• ‘Subtle' (vegetable-focused small plates/starters) eg, ‘acquerello' risotto, almond praline, reduced port and black crumble
• ‘Delicate' (fish mains)
• ‘Robust' (meat mains) eg, seared ox tail ravioli, beef consommé, bone marrow and fresh herbs
• ‘Strong' (cheese)
• ‘Greedy' (dessert) eg, whole roasted figs in the leaf, Gâteau Basque, extra thick double cream

The tasting menu will allow guests to choose a dish from each ‘trait' for £78 per person or with matched wines for an additional £72.

"We've come up with the menu together," added Ferrari. "The food belongs to both of us, the entire concept of the restaurant belongs to both of us, and we can be much more in control of the entire experience for our guests if we share these roles between us."
