The Langley, the new luxury hotel set to open within the former estate of the Duke of Marlborough in Iver, Buckinghamshire, has announced the appointment of a head chef who will oversee four dining outlets.
Marco Ardemagni has taken on his first head chef role on joining the 41-bedroom hotel, which is due to open in the summer, from Sushi Samba, London, where he was senior sous chef. Earlier in his career he worked at La Posta Vecchia and Il Pellicano in Italy.
Ardemagni will head the all-day dining flagship restaurant Cedar as well as overseeing afternoon tea served in the Drawing Room, a light menu in the Churchill bar and healthy dishes in the Spa Lounge.
Located within a 150-acre estate, the Langley hotel will operate under Marriott’s Luxury Collection brand. It is owned by City and Country Hotels, a subsidiary of Arab Investments, and will become the sister hotel to the 36-bedroom Wellesley hotel in London’s Knightsbridge.
Cedar will offer vegetable-focused small plates, primi dishes in starter- and main-sized portions and sharing dishes such as grilled rib steak with peppercorn sauce and lemon-miso charred stone bass with béarnaise. Main courses will include red snapper and mussels in broth with croutons and seaweed butter; and lamb chop and shoulder with smoked aubergine, broad beans and pecorino romano.
The dessert menu will feature millefeuille with macadamia mousse, rhubarb and dill compote; pistachio parfait with white and dark chocolate mousse and mint meringue; and peanut and chocolate cake with sesame and miso cream and dark chocolate shards.

Joining Ardemagni at the Langley will be head pastry chef Francesco Martella, who also previously worked at Sushi Samba, La Posta Vecchia, L’Atelier de Joël Robuchon, Alain Ducasse at the Dorchester and Il Pellicano.
