Brian Fantoni appointed executive chef at the Swan at Shakespeare's Globe

Brian Fantoni has been appointed executive chef at the Swan at Shakespeare's Globe Theatre following the departure of Allan Pickett.

Fantoni joins the site from the Westbury, Mayfair, where he served in the same role. Other previous experience includes time as premiere sous-chef at Claridge's, and head chef at Cantina del Ponte.

Fantoni will head up food and drink operations across the Swan's all-day dining restaurant as well as the site's bar and private event spaces. Alongside him Simon Ulph, formerly of Jackson Boxer and Andrew Clarke's St Leonard's, has joined the team as head chef.

The site is expected to undergo an extensive rebrand in the near future, including an overhaul of the menu and significant changes across the entire business.

It comes after the departure of Pickett, who left after two years at the site having joined in March 2017. Pickett's departure from the role sees him move away from the day-to-day operations of the kitchen while remaining as a non-executive director, assisting the operational board.

Instead the chef will establish himself at soon-to-open hotel the Standard in Camden, London where he will serve as head chef of the ground floor restaurants and bars.
