Working at a wheat farm in my home country, Ukraine

Porridge with a lot of mixed fruits

I go to the gym and listen to music
Which is your favourite restaurant?
La Mar in Peru - the ceviche selection is just incredible. Qawana Lodge in Peru is also fantastic; it serves amazing, simple food and it has the most beautiful views of the Sacred Valleys
What's your favourite hotel?
All of the Four Seasons hotels are fantastic
What is your favourite drink?
Zacapa XO, it's a Guatemalan rum aged in French oak
What is your favourite food/cuisine?
I love food originating from Eastern Europe - it reminds me of home
What flavour combinations do you detest?
I'm not a big fan of really sweet desserts
What do you always carry with you?
I'll always have my headphones with me so I can listen to music

Which person gave you the greatest inspiration?
Jean-Christophe Novelli - he gave me great inspiration when I first came to England

At the gym, as a personal trainer

Ten or 15 years ago… it was a long time ago, I can't remember!

I love so many films, but any films based on real-life stories are usually my favourite

Sir Alex Ferguson's autobiography
Who would be in your "fantasy" brigade?
I'm lucky enough to have worked with a lot of talented chefs both at Orrery and in my previous position at the Mirabelle

I would travel more
