Raegan Lynch started her career in hospitality by working at a local Italian restaurant at the age of 15, where she progressed quickly to manager, but it took a celebratory birthday dinner for her 21st for her to fall in love with fine dining. She asked if the restaurant had any roles and the rest is history.
Since then she has taken on senior roles at Kimpton Blythswood and Crossbasket Castle, after which she was assistant general manager for the two-Michelin-starred Restaurant Andrew Fairlie at Gleneagles, managing a team of 26 and maintaining the exacting standards of the restaurant.
Now, as restaurant manager at Cromlix, Lynch is spearheading the launch of the Cradle, a key new opening within the hotel’s wider development. Drawing on her experience in Michelin-starred and high-volume environments, she is building the operation from the ground up by shaping the team, setting service standards and ensuring the concept delivers both commercially and creatively.
Throughout her journey to Cromlix, participating in the Annual Awards of Excellence and the Gold Scholarship has been pivotal to Lynch’s growth, allowing her to blend high-volume operational management with elite-level service standards.
Lynch also mentors team members into leadership roles and creates a culture where people feel supported and challenged.
Beyond Cromlix, she works with Springboard and local colleges such as South Lanarkshire College, where she supports new entrants into the industry through mock interviews and work placements, while also mentoring candidates through the Royal Academy of Culinary Arts.
What does winning an Acorn Award mean to you?
It is the ultimate validation that the standards I strive for are recognised as world-class. To be named among the 30 under 30 in this landmark 40th anniversary year is a profound honour. For me, the Acorn represents a decade of growth from my early days in local cafés to managing large-scale luxury opens and expansions and elite service environments. It provides a national platform to prove that young leaders can drive significant commercial success through a human-first approach, ensuring that as our industry evolves, the heart of hospitality remains personal.
How do you get the best out of your team?
I lead with a philosophy of empowered excellence. I set non-negotiable standards, but I grant my team the autonomy to deliver them with their own unique personality and intuition. I get the best out of them by being their most visible supporter, investing in their progression and advocating for their personal growth as if it were my own. When a team member feels their career is being actively built rather than just utilised, they don’t just meet expectations, they exceed them.
What excites you about your future in hospitality?
What excites me most is the legacy I am building through the people I’ve mentored. Seeing my previous team members achieve incredible things, such as moving into senior roles and winning their own accolades is deeply fulfilling. I am excited to continue bridging the gap between education and industry, ensuring that the next generation of hospitality talent is defined by resilience, kindness and world-class ambition.
