Purple reigns in the Dr Squid Mule

This cocktail was created by Shaun Bebington, owner of the Pocketful of Stones bar and distillery in Penzance, Cornwall.

 

The cocktail showcases Pocketful of Stones Dr Squid gin, a savoury spirit flavoured with squid ink, as well as coriander and sea buckthorn. The gin, which is black when poured, turns into a fetching violet when paired with a mixer – here a refreshing lime and ginger fizz.

 

Ingredients

  • 50ml Dr Squid Gin
  • 15ml lime juice/fresh lime
  • Ginger beer 
  • Crushed ice
  • Lime wheel and rosemary, to garnish

Method

Fill a highball glass to the top with ice and squeeze over half a fresh lime. 

 

Fill the glass almost to the top with ginger beer, leaving enough room for the gin. Layer 50ml Dr Squid Gin into the top of the glass, pouring slowly.

 

Serve with a fresh lime wheel and a sprig of rosemary, and stir with a straw before tasting.
