The restaurant only won its second Michelin star in February
Chef Angelo Sato is to relaunch his Humble Chicken restaurant in London this week with the aim of winning a third Michelin star.
The Soho restaurant will reopen on 18 June after a temporary three-month closure having undergone a complete refurbishment and reimagining of its omakase menu.
The number of covers has been cut from 20 to 13 and guests will now sit around the open kitchen at a counter made from a solid piece of cherry wood.
Humble Chicken opened as a yakitori counter in 2021 before relaunching as a fine dining offer in 2023, switching its £5 skewers for a £135 tasting menu.
The change paid off and Sato, who has trained in kitchens including Restaurant Gordon Ramsay in London and Narisawa in Tokyo, oversaw the restaurant win its second Michelin star in February.
The latest iteration of Humble Chicken will see Sato serve a reimagined 16-course omakase menu, with dishes reflecting both his Japanese and European heritage.
Exact dish details have yet to be revealed, but the new menu will cost from £235 per person.
Drinks will include a wide range of sakes, wines, and non-alcoholic options such as pear with milk bread or Thai basil stems and root vegetables infused with Malawi mountain tea.
Humble Chicken will open from 6pm – 9pm Wednesday to Saturday and will also run a 1pm service on Saturday.
