Aquavit London appoints Giancarlo Princigalli as general manager

Nordic restaurant Aquavit London has appointed Giancarlo Princigalli as general manager.

Princigalli joins the Michelin-starred restaurant in St James's, sister restaurant to the two-Michelin-starred Aquavit New York, with a decade of fine-dining and Michelin-starred experience, most recently having held the position of general manager at the Carlyle Restaurant in New York, part of Rosewood Hotels.

He has also held managerial roles at Caprice Holding's Harry's Dolce Vita in Knightsbridge, Hakkasan Group's HKK, Alyn Williams at the Westbury, Marcus Wareing at the Berkley, and Gordon Ramsay Holdings.

In his new role, he will oversee a team of 50 and lead the re-opening and running of all aspects of the London restaurant, including financial business compliance and HR and training, while working closely with head chef Jorjon Colazo.

Aquavit London director Wendy Haowei said: "We are delighted to welcome Giancarlo to our extended Aquavit family in London. His extensive experience in some of the city's most prolific restaurants and hotels will bring fresh perspective and expertise, and we are excited to see him take the reins of the day-to-day team."

Princigalli added: "Aquavit is internationally renowned for its exciting and elevated cuisine, and it's a real honour to be working with the team at this Michelin-starred London restaurant. I look forward to helping to further enhance its reputation as one of the UK's finest Nordic restaurants."
