The Trinity restaurant sandwich truck will open a permanent site at Nova Coffee & Bakery in Farringdon
BM Caterers has partnered with Adam Byatt Restaurant Group to launch a sandwich offering at Nova Coffee & Bakery in Farringdon.
Opening on 3 November, Outside at Nova will make fresh sandwiches on site, to complement Nova’s existing bakery and coffee offer.
The menu – designed by Trinity chef, India Thomson – will capitalise on the growing trend of up-market sandwiches, offering the likes of coronation chicken, tuna nicoise, aubergine parm and chilli falafel.
The concept originated as the Outside sandwich truck which opened outside the Michelin-starred Trinity restaurant in Clapham earlier this year.
Byatt said: “It’s good to see Outside find a permanent home with people I’ve known and respected for a long time. The BM team understands what we’re trying to achieve – simple food, well made, for people who care about what they eat.”
Pete Redman, chef director at BM Caterers, added: “This partnership is about doing something thoughtful in a different kind of space. We wanted to really tap into the rise in the super sandwich movement and create something special in Farringdon.”
Nova will continue to offer opportunities for training and development for individuals from disadvantaged backgrounds and the new Outside at Nova concept will be used as a base for future collaborations with charities and community organisations that help people access employment in hospitality.
