Brighton's Amarillo to close this month

Brighton's Amarillo restaurant will close on 20 August, it has been confirmed.

Posting on Instagram, head chef Ian Swainson said: "It's been an incredible journey and I'm so grateful to have done it with these people! You will be in my heart always."

Swainson, former head chef at the Pass and the Samling, launched the restaurant in 2019 as a 30-cover site operating out of the Lost in the Lanes cafe on Nile Street. It later moved to a permanent residency at Drakes hotel.

The menu comprised a selection of pintxos and sharing plates influenced by international cuisines such as Spanish, Japanese and Italian.
