The chef sold his Tyddyn Llan restaurant in Wales in 2024 after 22 years
Bryan Webb is coming out of retirement to run a three-month residency in a Chester restaurant.
The chef, who led the Tyddyn Llan restaurant with rooms in Llandrillo, Wales, for 22 years, is returning to the stove to cook at Covino in Chester.
He will be working solo in the kitchen until the end of June, serving simple, classic dishes using spring produce.
Bryan and his wife Susan sold the formerly Michelin-starred Tyddyn Llan last summer with the intention of retiring. After some extensive travelling, Covino owner Chris Leadler convinced him to return to the kitchen for a three-month stint at the Chester restaurant and wine bar.
Leadler was a regular at Tyddyn Llan and when his head chef left at the start of the year he decided to host a series of chef ‘pop-ups’ rather than search for a full-time team member.
Bryan said: “After over 40 years being tied to a stove, I found it tough to just walk away. I guess I’m like an old boxer unable to give up the ring!
“Customers can expect tagliatelle with broad beans, bacon and mustard; free range chicken with morels and tarragon; wild bass with lava bread butter sauce (me on a plate!); plaice with pea mash and many more of my signature dishes that I have been cooking throughout my career.”
Covino is situated on Northgate Street in Chester, and is a small intimate restaurant with only 24 covers.
It offers over 130 wines from around the world and each of Bryan’s dishes will be paired with a recommended wine.
