Sustainability report reveals how hospitality's leaders are going green

The Caterer's sustainability report has just dropped, pulling together insights from the sustainability leaders in the hospitality sector on how they're going green.

Recent research by restaurant booking platform OpenTable and The Caterer found that 85% of more than 200 operators believe their guests rate sustainability as important – the commercial and social imperatives for operators to work on their eco credentials have never been more pressing.

The report details how to do the right thing for the planet and your business, from how to take those first steps in the sustainability journey and how to design a menu with sustainability in mind; to insights from The Caterer's Sustainability Summit and an overview of the green accreditation schemes and what impact they can have on your business.

It also includes 10 practical ways to make your business more sustainable with advice from the Carbon Trust, waste experts WRAP, the Sustainable Restaurant Association (SRA) and the United Nations' World Food Programme; how to get guests and staff to embrace your green goals; and an interview with Doug McMaster of Silo in London on how he's gone zero waste.
