The MasterChef: The Professionals 2018 finalist pays homage to his favourite meals from the Mediterranean
Chef Dean Banks is to open Mediterranean restaurant Amber in a former Brewdog pub in St Andrews this week.
Amber is launching on 5 August as a restaurant serving the chef’s favourite meals from Greece, Portugal, Italy and the south of France.
Dishes include tomato gazpacho, seared tuna with mango and chilli salsa, crab linguine with chipotle and coriander and Amber Greek salad.
Over the past five weeks, Banks regularly posted videos asking for design inspiration from his followers so that it can “feel like everyone’s place to be” once the site completes.
Banks worked across Rick Stein’s Seafood Restaurant and travelled to more than 40 countries in the world prior to starring on MasterChef: The Professionals in 2018.
In 2019, he launched Haar in St Andrews, which holds four-AA-rosettes, followed by Dulse, Dean Banks at the Pompadour, Dune and Temple Lane.
