Chef Mario Perera swaps the Dorchester for Jumeirah Carlton Tower

Mario Perera, the former executive chef at the Dorchester hotel in London’s Mayfair, has been appointed to the same role at Jumeirah Carlton Tower.

Perera joins the Knightsbridge hotel after eight years at the Dorchester, where he led a team of 80 chefs across multiple F&B outlets.

Prior to that, he held senior roles at Four Seasons London and also worked closely with the Royal households, overseeing state banquets at Windsor Castle and Buckingham Palace.

He is also known for his passion for mentorship, having supported both the Royal Academy of Culinary Arts and the Young Chef Olympiad as a leader and educator.

Perera will be responsible for all culinary operations at the 186-room Jumeriah Carlton Tower, which is home to the Chinoiserie restaurant, a health club, spa, ballroom, and function rooms.

Jumeirah Carlton Tower opened in 1961 and in 2019 underwent a £100m refurbishment that was completed in 2021.

Jumeirah, a member of Dubai Holding, operates a portfolio of 31 properties across the middle East, Europe, Asia and Africa, including the famed Jumeirah Burj Al Arab in Dubai.
