Coen has led the kitchen at the Michelin-starred London restaurant for the past four years
Max Coen has stepped down as co-owner and chef at Michelin-starred Dorian in London’s Notting Hill.
In a post on Instagram, Coen said: “After 4 years I have decided to step down from my executive role at Dorian.
“I could never have dreamed of shaping, building and opening the restaurant that Dorian is today. The team I brought together, the energy and soul we built and the food we created are things I’ll keep with me forever.”
He thanked everyone for being an “incredible” part of his journey.
Notting Hill Fish Shop’s Chris D’Sylva teamed up with Coen to launch Dorian in 2022, which went on to win a Michelin star in 2024.
Coen had worked at the likes of Restaurant Frantzén, Gordon Ramsay Restaurants, Kitchen Table and Ikoyi prior to joining the project.
