Dalhousie Castle nears completion of £6m refurbishment

Dalhousie Castle near Edinburgh has completed the bulk of its £6m refurbishment following a change in ownership.

The property dates back to the 13th century and belonged to the Ramsay family for more than 800 years, making it one of the longest continuously family-owned castles in Scotland.

Over the course of history, the castle was besieged by King Henry IV and Oliver Cromwell and also welcomed Edward I of England and Mary, Queen of Scots.

All 35 bedrooms, public spaces and food and beverage outlets have been upgraded as a result of the recent investment programme, which started in October 2024 under 7 Hospitality Management.

Notable additions include the Alexander Bar, which takes its name from Sir Alexander de Ramsay, and the Ramsay Restaurant, set within the castle’s former ballroom.

The two-AA-rosette Dungeon restaurant now features a new eight-course fine dining tasting menu celebrating the best of Scottish ingredients.

Guests can also try a huge variety of single cask whisky hidden behind a secret bookshelf door.

Philip Egan, general manager of Dalhousie Castle, said: “As one of Scotland’s oldest inhabited castles, there was an incredible opportunity to reveal the full appeal of the property in a more refined and immersive way, while remaining true to its character. 

“We wanted guests to feel the sense of story and warmth from the moment they arrive – an authentic Scottish castle experience combined with the comfort and attention to detail expected from a high-end stay.” 

The refurbishment is due to complete by July 2026.

Dalhousie Castle was previously operated by Robert and Gina Parker under luxury hotel group the Robert Parker Hotel Collection and was sold to a private US buyer in late 2023.

According to Companies House, Richard Ellison, founder and chief executive of 7 Hospitality Management, is a director of Dalhousie Castle.
