Dubai-based Select Group acquired the property in 2022 and oversaw its £90m refurbishment
Fairmont Cheshire, the Mere, is to open on 10 July, having completed its £90m transformation.
The property marks Fairmont Hotels & Resorts’ fourth UK hotel. The property sits within 157 acres of Cheshire countryside and offers 116 bedrooms, 23 of which are suites.
It is also home to Gordon Ramsay at the Mere restaurant, plans for which were announced in March.
Gordon Ramsay Restaurants Global and Fairmont previously collaborated on the Savoy Grill, the River Restaurant and the Michelin-starred Restaurant 1890 at the Savoy in London.
Guests will also be able to enjoy afternoon tea and Champagne at the Orangery, Indian cuisine at the Club Lounge, post-treatment smoothies at the Spa Bar, wellness experiences at the Fairmont Spa and golf on the 18-hole championship course.
The hotel also features a 1,000 sqm Grand Ballroom that can host up to 1,000 guests, as well as four boardrooms for meetings and private dining.
The property was first mentioned in the Domesday Book of 1086 and it previously operated as a leisure estate and private club.
In 2022, Dubai-based developer Select Group acquired the hotel for £35m and has since invested £90m into the project.
