2008 International Copa Jerez entries open

Entries for the 2008 International Copa Jerez Sous Chef and Wine Waiter of the year award for matching sherry with food are now being sought.

Now in its third year, the competition looks for up and coming sous chef and sommelier duos to demonstrate the versatility of sherry as a food wine.

The Sherry Institute of Spain will pick 10 finalists, who will battle it out during a live cook off at Salon Culinaire de Londres at Hotelympia in February, which will be judged by three-Michelin-starred chef Heston Blumenthal.

Chefs will be expected to put together a three course menu, using sherry as an ingredient in at least one dish, while sommeliers will be asked to select three sherries, each from a different producer, to complement the menu.

The winners will receive a gastronomic tour of the sherry region of Jerez in Andalucia, Spain. They will also become the UK entrants to the world final in Jerez.
