Barburrito takes on two more restaurants
Mexican-style fast-casual restaurant brand Barburrito is set to take on two more sites, in Edinburgh and Derby.
The openings will take Barburrito to 21 sites nationally, with a total of six in Scotland.
It has exchanged contracts on a property on Forrest Road in Edinburgh close to the university. Work is expected to start on site in the summer, with plans to open in early autumn.
Meanwhile, it has also exchanged on a site at intu Derby, targeted for a mid-2017 opening.
Last week the business, which currently operates 12 sites under the brand, opened a site in Hammersmith Broadway shopping centre, its 13th site overall.
The next site is already in development, with a planned opening at intu Metrocentre Gateshead at the end of March.
In October 2015, the business also acquired Pinto Mexican Kitchen in Scotland; five restaurants that are positioned in high footfall locations in Edinburgh and Glasgow. It aims to rebrand those to the new-look Barburrito before summer 2016.
Backed by growth capital provider BGF, Barburrito is targeting a further ten sites over the next two years.
