Basic red wine syrup


(makes 1.25 litres)

600ml red wine
400ml water
350g caster sugar
1 cinnamon stick
2 star anise
2 split vanilla pods


Boil the wine, water and sugar. Add the spices. Off the heat, stir until dissolved.
