Crosswise racking options on new Henny Penny SmartCombi ovens from ServEquip make it possible to hold more, with, for example, a six-grid oven gaining equivalent capacity to a 10-grid without loss of cooking quality. The new ovens feature patented Advanced Steam Technology for greater control of relative moisture and cooking climate inside the oven cavity. This is further aided by a steam exhaust system which, as the cooking cycle finishes, removes and condenses humidity automatically and increases user safety each time the door is opened.

Other SmartCombi features include WaveClean automatic self-cleaning, which can be set to run for light, medium and heavy cleaning. Users pop in two-in-one cleaning cartridges, avoiding any chemical contact, before switching on the push-button cycle. A de-liming facility also contributes to lower maintenance and energy consumption.
