Chef – My favourite salt

I love it, even if it is bad for you. Raymond Blanc taught me the importance of using salt properly. Correctly used it can take the ordinary and turn it into the extraordinary. I prefer to use natural salts and only buy Maldon sea salt for my restaurant.
