Chefs Nigel Boschetti and Anton Manganaro reveal BAFTAs menu

Chefs Nigel Boschetti and Anton Manganaro, executive chef at the Grosvenor House hotel and head chef at the BAFTA 195 restaurant respectively, have revealed the menu for the EE British Academy Film Awards.

The starter will be beetroot-marinated salmon with horseradish yoghurt, pink grapefruit dressing, and confit lemon; with the main course loin of lamb 'en croute', slow-braised shoulder of lamb, spiced red cabbage with golden raisins, butternut fondant, spinach and watercress mash.

There will be vegetarian options for both the starter and the main course, with the veggie starter to be beech-roasted pepper with quinoa salad and leek and wild mushrooms; while the veggie main will feature a Yorkshire feta 'en croute' in place of the loin of lamb.

Dessert for all will be a 70% dark chocolate brownie with mousse, lavender cremeux and berry compote.

Boschetti - winner of the 2012 Catey Award for Hotel Chef of the Year for 250 rooms and above â€' joined the Grosvenor House hotel in 2010, having previously worked at the Royal Lancaster hotel, as head chef at Simpsons on the Strand, at event caterers Payne and Gunter, and as executive chef at the Millennium Gloucester hotel.

Manganaro began his career at the Royal Garden hotel, before going on to help win a Michelin star at former fine-dining restaurant Interlude and two-Michelin-starred Mayfair site the Greenhouse. Previous to joining the BAFTA 195 restaurant in 2006, he was a private chef for a European family, and has also worked with top chefs including Anton Mosimann, Gary Rhodes, Gunther Schlender, and Paul Gayler.
