Christmas pudding ice-cream


125ml milk
125ml double cream
4 egg yolks
50g sugar
250g Christmas


Boil milk cream and 25g sugar. Whisk egg yolks with remainder of sugar. Pour boiling liquid on to yolks and stir. Put into ice-cream machine and churn. When nearly set crumble in 250g Christmas pudding. Leave to finish freezing.
