Electrolux has added a new feature to the company's range of Air-O-Steam combi-ovens that tells caterers how much longer a chosen cycle has to run. Described as a "new algorithm for residual time estimation", the patented system is based on the advanced neural networks technology being used in robotics, medicine and artificial intelligence and is also available on the Air-O-Chill range of freezers and chillers. The caterer simply inserts the probe into the food, starts the desired cycle and the residual time estimate is calculated and displayed within 10 to 40 minutes, depending on the cycle. Electrolux believes the feature will help caterers in busy staff restaurants and institutional kitchens plan their time more efficiently.
