Czech-made Retigo combis from Bradshaw
Launched in the UK by Bradshaw, Retigo combi-ovens are made in the Czech Republic in sizes from six-grid (gastronorm 1/1 and a compact version holding gastronorm 2/3 trays), 10-grid (1/1 and 2/1)and 20-grid. A complete cook-chill centre combining 6 x 1/1 combi, regenerating oven and blast chiller is also available. Control features include pre-programming of up 100 menus, a quick-start facility and HACCP software.
With boilerless versions, water sprayed inside the cooking chamber is preheated by contact with a waste steam recirculation system, thus speeding the rate of steam production. On models with separate steam boilers, a calcium-control system inside the boiler senses automatically when decalcification is required. If any damage has occurred to the boiler, the oven switches automatically to direct steam production, enabling cooking to continue until the damage is rectified.
