English National Culinary Team wins gold at La Parade des Chefs

The English National Culinary Team has scooped a gold medal in the La Parade des Chefs restaurant competition at Hospitality yesterday.

Cooking at the NEC-based show, the team comprising Nick Wort, Andrew Ditchfield, Adam Smith, Clark Crawley, Hayden Groves, Dominic Barham and KP Abdoulaye Fadiaba, cooked a three course meal for 100 covers.

Their meal was fillet of Atlantic halibut, royale of langoustine, celeriac, spiced apple gel and sauce nantua, a main course of thyme roasted Exmoor venison, braised bonbon of venison, wood-smoked parsnip, confit of savoy cabbage and buttered fondant potato, followed by maple cream, sticky toffee pudding and salted caramel crunch.
