Fish and chips in banana leaves – by Maria Elia

INGREDIENTS

(makes 25)

Fresh banana leaves
French fries
1kg monkfish, cut into 20g cubes, battered and deep-fried

For the fish batter
170g flour
Pinch salt
Pinch brown sugar
Pinch baking powder
2tsp smoked paprika
Enough John Smith's beer to make a light batter (about 220ml)

For the aïoli
2 eggs plus 1 yolk
100ml lime juice
3 garlic cloves
1tbs mustard
Pinch sweet smoked paprika
600ml olive oil

METHOD

Make the aïoli by blending eggs, yolk, lime juice, garlic, mustard and paprika in a food processor. Slowly incorporate 600ml of olive oil. Season. It mustn't be too stiff or runny.

Fold banana leaf into a cornet shape and staple bottom. Fill with a handful of french fries and two pieces of fried fish. Pipe a little aïoli over the fish.
