Hosital recipes: carrot cake, by Apetito
Carrot cake is one of three recipes for hospital patients devised by specialist frozen meal supplier Apetito.
INGREDIENTS
(makes 20-24 portions)
- 390g granulated sugar
- 420g cake flour
- 10g bicarbonate of soda
- 10g cinnamon
- 52g dried egg powder
- 460g fresh grated carrot
- 140g walnut pieces
- 160ml water
- 350ml vegetable oil
- Pinch of salt
METHOD
Place all ingredients into a high-speed mixer and mix well for three minutes. Weigh into foil loaf tins.
Bake at 170°C for 40 minutes until risen and golden brown. Now chill.
